Angel Hair Pasta With Tomato Scallop Sauce

  • 1 lb. med. scallops
  • 2 T. olive oil
  • 1 med. onion, chopped
  • 1 sm. green pepper, chopped
  • 1 clove garlic, minced
  • 2 (16-oz.) cans diced tomatoes
  • 1 T. oregano
  • Salt and pepper to taste
  • 1 lb. Angel Hair pasta, cooked
  • Parmesan cheese to taste
     
 
In a skillet, combine oil, onion, green pepper, and garlic. Saute over medium heat until tender, not brown. Add tomatoes, oregano, salt and pepper; bring to a boil for one minute. Reduce heat and simmer for ten minutes. Add scallops and simmer another three minutes. Serve over pasta and top with grated Parmesan cheese. Yields 4 servings.
