Angel Hair Pasta With Tomato Scallop Sauce
|
- 1 lb. med. scallops
- 2 T. olive oil
- 1 med. onion, chopped
- 1 sm. green pepper, chopped
- 1 clove garlic, minced
- 2 (16-oz.) cans diced tomatoes
- 1 T. oregano
- Salt and pepper to taste
- 1 lb. Angel Hair pasta, cooked
- Parmesan cheese to taste

| In a skillet, combine oil, onion, green pepper, and garlic. Saute over medium heat until tender, not brown. Add tomatoes, oregano, salt and pepper; bring to a boil for one minute. Reduce heat and simmer for ten minutes. Add scallops and simmer another three minutes. Serve over pasta and top with grated Parmesan cheese. Yields 4 servings. |
