Frozen Strawberry Jam

  • 2 c. mashed strawberries
  • 1 T. lemon juice
  • 4 c. sugar
  • 1 pkg. powdered pectin
  • 1 c. water
Combine fruit, lemon juice, and sugar. Let stand 20 minutes, stirring occasionally. Boil pectin and water rapidly for 1 minute, stirring constantly. Remove from heat. Add berries and stir 2 minutes, until mixture begins to thicken. Pour into containers and cover. Let stand at room temperature for 1 hour. Refrigerate until set. Store in freezer. Keep in refrigerator after opened.
