Impossible Pumpkin Pie

  • 3/4 c. sugar
  • 1/2 c. Bisquick baking mix
  • 2 T. margarine
  • 1 can evaporated milk
  • 2 eggs
  • 1-16 oz. can pumpkin
  • 2 1/2 tsp. pumpkin pie spice
  • 2 tsp. vanilla
     
 
Heat oven to 350°. Grease pie plate. Beat all ingredients until smooth, (1 minute in blender on high or 2 minutes with hand mixer). Pour into pie pan. Bake until knife inserted in center comes out clean. 50 - 55 minutes.High altitude: Heat oven to 375° and bake 45 - 50 minutes.
