Walleye Italiano
|
- 3 T. margarine or butter
- 3/4 c. chopped onion
- 3/4 c. chopped green pepper
- 1 c. tomato juice
- 1 tsp. chili powder
- 3/4 tsp salt, divided
- 1/4 tsp. garlic powder
- 1/4 tsp. dried thyme leaves
- 1/4 tsp. dried oregano leaves
- 1/4 tsp. pepper, divided
- 2 lbs. Walleye, or substitute fillets, (8 oz.)
- 1 c. water
- 1/2 bottle white wine
- 1 1/2 c. shredded Mozzarella cheese

| Preheat oven to 350. In a 2 quart saucepan, melt margarine over medium -high heat. Add onion and green pepper. Cook for 4 - 5 minutes, stirring constantly. Stir in juice, chili powder, salt, garlic powder, thyme, oregano and 1/8 tsp. pepper. Bring to boil; reduce heat; simmer for 15 - 20 minutes, until sauce thickens. Place fillets in deep 10 inch skillet. Sprinkle remaining 1/4 tsp. salt and 1/8 tsp. pepper. Pour water and wine over fish. Bring to boil over medium - high heat. Reduce heat; simmer, covered for 8 - 10 minutes, or until fish is firm and opaque and just begins to flake..do not over cook. Drain liquid. Place fillets in 11 inch x 7 inch baking dish. Spoon on sauce. Sprinkle with cheese. Bake until cheese melts. |
