Oven Fried Chicken

  • 2 1/2- 3 lb fryer, cut up
  • 1/3 c flour
  • 1 1/2 tsp salt
  • 1 tsp paprika
  • 1/4 tsp poultry seasoning
  • 1/8 tsp pepper
  • 1/4 c butter, melted
  • 1 c uncooked rice
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1/2 c chopped onion
  • 3 c hot chicken broth
     
 
Wash and dry chicken pieces. Combine flour, salt, paprika, poultry seasoning and pepper. Dredge chicken in flour mix. Place chicken, skin side down in large casserole dish, do not overlap. Pour melted butter over chicken and bake at 400 degrees for 25 minutes. Remove chicken from baking dish. Spread rice, salt, pepper and onion in baking dish; place chicken pieces over rice, skin side up, pour broth over chicken. Cover and continue baking at 400 degrees for 45 minutes.
