Garden Potato Salad

  • 2 1/2 pounds cooked, diced red potatoes
  • 1 medium red onion, chopped
  • 1 cucumber, sliced
  • 1 small green pepper, chopped
  • 6 hard-boiled eggs, chopped
  • 1 envelope powdered Ranch dressing
  • 8 oz. Hellmann's mayonnaise
  • 8 oz. sour cream
     
 
Combine potatoes, onion, cucumber and green pepper in a large bowl. In a small bowl, mix together the eggs, Ranch dressing, Hellmann's mayonnaise, sour cream (if too dry add more Hellmann's), salt pepper and garlic powder to taste. Add egg mixture to vegetables. Stir until combined. Note: Tastes best when made a day before serving
