Sprinkle chicken with garlic poweder, salt & pepper, let rest 15 minutes; add olive oil to large skillet and cook chicken 3 - 4 minutes on each side or until done; do not over cook. Remove chicken from pan and chop. Combine remaining ingredients in a bowl and mix well; add chicken and stir until well blended. Transfer to an ovenproof dish and bake 350 degrees for 20 minutes or until bubbly. Serve with crackers or pita chips. Note: Well seasoned chicken makes this a hit. When in a hurry I use a rotisserie chicken, skinned, deboned and chopped.
