Apricot Ginger Balls -high Energy Snack

  • 1 c. dried Apricots
  • 1 c. pecans or almonds
  • 1/4 c. candied ginger
  • 1/2 c. raisins
  • 1 c. unsweetened coconut
  • 1/4 c. sugar - optional
  • 12 gingersnaps - crushed
     
 
A food processor makes these in a snap or you can hand chop. Blend all but the gingersnaps. Blend for 1 minute in a food processor. Oil your hands and form into one inch balls. Roll in gingersnap crumbs and place on wax paper. Let dry one hour before storing in a covered container. Makes 12
