Break matzos into medium-sized pieces. Soak matzos in water and drain immediately. Mix with beaten eggs, milk and salt. Place in buttered/oiled skillet and fry on both sides until brown. Sprinkle with sugar and cinnamon or drizzle with honey or passover pancake syrup.
