Cucumber Pickles

  • 2 gal. cucumbers
  • 2 cups onions sliced thin
  • 3 cups green peppers, sliced
  • 1 cup red pepper, sliced
  • 1 cup salt
  • 2 tsp. ground mustard
  • 1 Tbs. celery seed
  • 1/2 cup mustard seed
  • 2 tsp. cinnamon
  • 10 cups sugar
  • 1 cup water
  • 8 cups vinegar
     
 
Mix cucumbers, onion, green and red peppers. Pour salt over and let stand 4 hours, then drain. Combine mustard celery seed, mustard seed, cinnamon, sugar, water and vinegar. Pour over cucumber mix and heat through to 130 degrees. Put in jars.
