Deli Coleslaw Salad

  • 2 lb. head cabbage, shredded
  • 4 carrots, grated
  • 3 cucumbers, sliced thin
  • 2 red onions, sliced thin
  • 1 c. vinegar
  • 1 c. apple juice
  • 1/2 c. water
  • 2 T. salt
  • 3 T. oil
     
 
Combine vegetables, liquids, and seasonings and marinate for 24 hours or more. Salad keeps for several days.
