Saucy Chicken And Asparagus
|
- 1 1/2 lb. asparagus spears, halved
- 4 bonless skinledd chicken breast halves
- 2 T. oil
- 1/2 tsp. salt
- 1/4 tsp, pepper
- 1 can cr. of chicken soup
- 1/2 c. mayonnaise
- 1 tsp. lemon juice
- 1/2 tsp. curry powder
- 1 c. shredded cheddar cheese

| If desired, partially cook asparagus; drain. Put asparagus in greased 9" sq. baking pan.In skillet over medium heat, brown chicken in oil. Season with salt and pepper. Arrange chicken over asparagus. In a bowl, mix soup, mayo, lemon juice and curry powder, pour over chicken. Cover and bake 375° for 40 minutes or until tender. Sprinkle with cheese. Let stand for 5 minutes. Serves 4 |
