Red Potato German Potato Salad
|
- 8 or 10 red potatoes boiled, peeled and cut into 1 inch dice.
- 3/4 lb. bacon
- 1 C. onion, chopped
- 1/2 C. plus 2 T. water
- 2 T. corn starch
- 1 C. sugar
- 1 C. apple cider vinegar
- 2 tsp. salt

| Fry bacon and drain, reserving bacon grease. Add chopped onion to approximately 1/2 C. bacon grease and cook until transparent. Combine 1/2 C. water, 2 T. corn starch and add to onion/grease mixture and cook until thickened, stirring constantly. Add 1 C. sugar, 1 C, vinegar, and 1/2 T. salt to mixture and stir well. Gently fold into diced potato and bacon mixing well. Serve warm. |
