Sausage Stuffing

  • 8 c. cubed whole wheat bread ( 12 slices )
  • 1/2 lb. bulk turkey sausage
  • 1 1/2 tsp. vegetable oil
  • 3 stalks celery chopped
  • 2 onions chopped
  • 1 clove garlic minced
  • 3 apples, peeled, cored and chopped
  • 2 T. chopped sage or 2 tsp. dried
  • 1 tsp. chopped thyme or 1/2 tsp. dried
  • 1/2 tsp. dried basil
  • 1 1/2 - 2 c. de- fatted low sodium chicken stock
  • salt and pepper to taste
     
 
Preheat oven to 350°. Spread bread on baking sheet and bake 15 - 20 min. or until lightly toasted. Heat non- stick skillet over medium heat, add sausage and cook breaking up with spoon until no longer pink. Drain in colander to remove fat and set aside. Add oil to skillet and heat on medium add celery, onions and garlic; saute for about 5 min. or until softened. Add apples and sausage. Cook for 8 - 10 min. or until apples are tender. Transfer to bowl and add bread and spices. Toss well and add stock. Makes enough for one 12 lb. turkey or serves 8 as side dish.
