Waldorf Chicken Salad
|
- 2 c. chicken breast, cooked, cubed
- 2 c. Granny Smith Smith apples, cored, chopped
- 1 c. celery, chopped
- 1/4 c. raisins
- 2 T. reduced-calorie mayonnaise
- 2 T. low-fat plain yogurt
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cinnamon
- ground black pepper to taste
- lettuce leaves

| In a large bowl, combine the chicken, apples, celery and raisins. In a cup, stir together the mayonnaise, yogurt, nutmeg and cinnamon. Add to the chicken mixture and toss until coated. Season to taste with the pepper. Serve on lettuce linedsalad plates. Serves 4. |
