Walnut Chicken

  • 1/4 c. soy sauce
  • 1/2 tsp. ginger
  • 1 lb. chicken breasts, cut in 1" pieces
  • 3 T. oil
  • 1/3 c. sliced green onions
  • 1 garlic clove, cut in half
  • 1 c. coarsely chopped walnuts
     
 
Combine soy sauce and ginger. Add chicken and let stand 15 minutes. Heat Wok. Add 2 T. oil, heat. Add onion, garlic and walnuts. Cook 3 minutes. Remove garlic and discard. Remove walnuts and onions to bowl. Heat remaining 1 T. oil, add chicken and soy mixture. Stir fry until chicken is done and soy mixture begins to coat chicken - about 5 minutes. Add walnuts and onions. Toss all together and serve.
