Fried Rice
|
- 3 T. cooking oil
- 1 c. chopped carrots
- 1 c. chopped onion
- 2 - 3 cloves chopped garlic
- 2 c. chopped smoked sausage
- 2 c. chopped pork or chicken, leftover
- 3/4 c. frozen corn (opt.)
- 3/4 c. frozen peas (opt.)
- 3 eggs, well beaten
- 1 1/2 c. cooked rice, leftover
- garlic salt, to taste
- black pepper, to taste
- 1/4 c. soy sauce, to taste

| Heat oil in skillet to 350° - 400°. Add carrots and sauté for 2 or 3 minutes. Add onions and garlic. Sauté until tender yet firm. Add sausage, pork or chicken, corn and peas. Sauté until hot. Stir in eggs. Cook for about 4 or 5 minutes or until eggs are done. Add rice, stirring all the time, and season with garlic salt and pepper. Season a couple of times while rice is browning. When rice starts to look brown, turn off heat and stir in soy sauce. |
