  • 6 eggs, do not break
  • 6 oz. cream cheese, softened
  • 1 7-oz. jar pimento-stuffed green olives
  • Red food coloring
Combine the eggs with cold water to cover in a saucepan. Bring to a boil over high heat. Simmer over low heat for 10 minutes. Let eggs cool. Peel the eggs and cut into halves lengthwise. Remove the yolk and fill the eggs with cream cheese. Press on olive, pimento side up, into each cream cheese eyeball. Dip the tip of a toothpick into the food coloring and draw broken blood vessels in the cream cheese. Yield 12 eyeballs.
