Waldorf Chicken Salad

  • 1/4 cup honey
  • 2 tablespoons Dijon-style mustard
  • 1 tablespoon poppy seeds
  • 1/3 cup lemon juice
  • 1/2 teaspoon grated lemon peel
  • 1/2 cup vegetable oil
  • 2 cups cubed cooked chicken or turkey
  • 2 apples, cored and diced
  • 1 cup diced celery
  • 1/3 cup toasted sliced or diced almonds
  • 1/4 cup minced green onions
  • 12 dried apricots, sliced (moist pack preferable)
     
 
Stir together honey, mustard, poppy seeds, lemon juice, lemon peel and oil in large bowl. Add apricots and let stand 30 minutes. Add chicken and toss lightly. Refrigerate until ready to serve. To serve, add apples, celery, almonds and green onions to chicken mixture; toss to coat. Makes 6 servings.
