Waldorf Salad

  • 3 red apples (diced)
  • 1 T. lemon juice
  • 1 T. sugar
  • 1/8 tsp. salt
  • 2/3 c. mayonnaise
  • 1 c. diced celery
  • 1/3 c. chopped pecans
  • 1 cups coarsely shredded cheese (opt.):
  • or
  • 2 c. drained pineapple tidbits
     
 
Toss apple with lemon juice, sugar, salt, and 2 tablespoons mayonnaise. Chill. Combine with remaining mayonnaise, celery, pecan, and cheese or pineapple; just before serving. Serve on salad greens. Makes 4 to 5 servings.
