Fettuccine With Snow Peas, Ham And Tomato

  • 1 Tbl butter
  • 2 shallots, finely chopped
  • 1 garlic clove, minced
  • 1 cup dry white wine
  • 2 cups whipping cream
  • 1 Tbl chopped fresh tarragon or 1 tsp dried
  • 1 1/2 cups snow peas, trimmed and halved diagonally
  • 1 cup slivered ham
  • 1 large tomato, peeled, seeded and diced
  • 1/2 cup freshly grated Parmesan cheese
  • salt and pepper
  • 1/2 # freshly cooked spinach fettuccine
  • 1/2 # freshly cooked white fettuccine
  • Additional freshly grated Parmesan cheese
  • Chopped green onion
  • Tarragon sprigs
     
 
Melt butter in large skillet over medium high heat. Add shallots and garlic and saute until soft but not browned, 2-3 minutes. Add wine and simmer until reduced to about 2 tablespoons, about 5 minutes. Add cream and tarragon and simmer, stirring occasionally, until reduced to about 1 1/2 cups, about 10 minutes. Stir in snow peas, ham and tomato and cook until heated through, 3-4 minutes. Mix in 1/2 cup Parmesan, salt and pepper. Combine spinach and fettuccine in large serving bowl. Pour sauce over and toss. Sprinkle with additional Parmesan. Garnish with chopped green onion and tarragon sprigs. Serve immediately.
