Green Pepper Jelly

  • 3 lg. green peppers
  • 1 1/2 c. cider vinegar
  • 6 1/2 c. sugar
  • 3 T. red pepper, crushed, dried
  • 1 bottle Certo
  • Dash of green food coloring
Chop pepper very fine by hand or in blender. Mix all ingredients, except Certo and food coloring. Bring to a rolling boil. Add Certo and bring to boil again. Boil for one minute while stirring. Add food coloring as desired. Pour into jars, seal and store. To serve, stir well and pour over cream cheese or spread on celery or crackers.
