Waldorf Salad

  • 2 c. Granny Smith apples
  • 1 tsp. lemon juice
  • 1/2 c. walnuts or almonds, chopped
  • 1 c. celery, chopped
  • 1/2 c. raisins
  • 1/4 c. mayonnaise
  • 1/2 c. whipped topping
  • 1/4 c. coconut flakes
     
 
Core apples and remove skin with vegetable peeler. Chop apples in 1/2 inch cubes. Put into medium bowl and pour lemon juice over the cubes. Toss apple cubes to coat well with juice. Chop nuts and celery on cutting board. Add both to apple cubes. Add raisins. In a small bowl, combine mayonnaise, whipped topping and coconut flakes. Stir to blend well. Add dressing to apple mixture and toss to coat all ingredients thoroughly. Cover and refrigerate at least one hour. Serve chilled.
