Microwave Apple Butter

  • 8 c. apples, cored, peeled and quartered
  • 1/4 tsp. cloves
  • 1/4 tsp. allspice
  • 2 c. apple cider or juice
  • 1 1/2 c. sugar
  • 3/4 tsp. cinnamon
In a 3-quart microwave-safe casserole, combine apples and cider or juice. Microwave on high for 12 to 15 minutes or until apples are tender, stirring twice during cooking. In a blender or food processor, process apple mixture until smooth. Return to casserole. Add sugar, cinnamon, cloves and allspice. Blend well. Microwave on high for 25 to 35 minutes until thickened and dark brown, stirring once. Cool. It will thicken more. Store in refrigerator.
