Many of these recipes are southern, passed down from generation to generation and reminiscent of front porch swings, garden fresh vegetables, sweet tea, and good home cooking. By combining tasty recipes and spicing up its pages with meaningful information, the contents will please the palate and nourish both body and soul.
Funds raised support: Founded in 1883, the Greater Birmingham Humane Society (Gbhs) was the first humane society in the South and one of the first twelve in our nation. It is dependent on the generosity of the public, businesses, and foundations to keep its doors open and receives no funding from city, state, federal agencies, or the United Way. In 2008, nearly 2,500 pets adopted from the shelter were given a second chance at life when they were welcomed into permanent, loving homes. However, new faces arrive daily with mouths to be fed, ears to be scratched and homes to be found. The Gbhs Auxiliary, a 501c3 organization, was established in 1979 and is dedicated to producing a variety of fundraisers each year. Proceeds from these events assist the Gbhs with operational costs and the multitude of services it provides our community. All of the money raised by the Auxiliary benefits the Greater Birmingham Humane Society.

Favorite Recipe
Pecan Pie Muffins
By: Gail Batchelor & Tina Willard - 1 c. chopped, toasted pecans
- 1 c. firmly packed brown sugar, light or dark
- 1/2 c. all purpose flour
- 2 lg. eggs
- 1/2 c. melted butter
- 1/4 tsp. vanilla
Combine pecans, brown sugar, and flour in a mixing bowl. In a separate bowl beat eggs until foamy. Stir in butter and vanilla. Pour egg and butter mixture over dry ingredients and stir just until moistened. Scoop batter into muffin tin lined with baking cups that have been sprayed with Pam. Bake at 350 degrees for 20-25 minutes. Check muffins after 20 minutes. Muffins should be a little gooey in the middle when removed from the oven. Cool on a wire rack. Note: I use an ice cream scoop to fill baking cups so that each muffin turns out the same size. These are marvelous with a cup of fresh brewed coffee. |
