Description: This is a hardback cookbook with a striking cover. The cover art is by Don Eddy whose painting of "Dreamreader's Harvest" appeared in the Naples Museum of Art in 2002 as part of The Liff Collection. The recipes were provided by members of both organizations, orchestra members and special friends of "The Phil". Find some old favorites and some wonderful, new recipes as well. You will want to try them all.

Favorite Recipe
Hot Tomato Soup
- 2 T. olive oil
- 1 c. sweet onion, diced
- 6 fresh basil leaves, chopped
- Salt & fresh ground pepper, to taste
- 5 c. (2 1/2 lbs.) fresh tomatoes, seeded
- 1/4 c. celery, finely chopped
- 1/4 c. flour
- 1/2 c. goat cheese, crumbled
- 1 tsp. sugar (opt.)
- 4 c. fresh chicken stock
- Sour cream
- Basil leaves
Heat olive oil, onion, 6 basil leaves, salt and pepper. Cook, stirring until onion is wilted. Add tomatoes and celery; stir to blend. Gradually add flour, goat cheese and sugar while stirring. Simmer for 10 minutes, making sure it doesn't stick or scorch. Add broth and heat thoroughly. Pour into individual bowls and top each with a dab of sour cream and a basil leaf. Serves 8. |
