Favorite Recipe
Lottie's Pound Cake with Pineapple Frosting

- 3 sticks butter
- 3 c. flour
- 3 c. sugar
- 1 c. heavy whipping cream
- 1/2 t. baking powder
- 1 tsp. vanilla
- 2 T. lemon flavor
- 6 eggs
- 1/2 t. salt
- Pineapple Frosting:
- 1 egg
- 2/3 c. evaporated milk
- 2/3 c. sugar
- 1/4 c. butter
- small can crushed pineapple
Cream sugar and butter. Then add eggs one at a time and beat. Add flour, baking powder and salt with cream alternately. Put in cold oven at 325 degrees for 1 hour and 25 minutes. Pineapple Frosting: Put in double boiler. Stir egg and add sugar, milk and butter. Cook 12-15 minutes until thickened or bubbly. Add can of drained pineapple. Let cool and spread on cooled cake. |
