Artichoke Pasta Salad
By: Anne Marie Mccollum - 1 lb. spiral pasta
- 1 c. vegan mayonnaise
- Juice of 2 lemons
- Sea salt & freshly ground pepper
- 2 c. artichoke hearts, chopped
- 1 lg. bunch fresh basil, finely chopped
- 1 sm. can sliced black olives, drained
Cook pasta according to directions and allow to cool. Combine other ingredients and toss with pasta. |
