Cheese Blintzes
By: Marsha Baker - 2 - 8 ozs. pkgs. cream cheese, softened
- 1/2 c. sugar
- 2 egg yolks
- 1/2 tsp. lemon juice
- 1-1/2 loaves sliced white bread
- 1-1/2 sticks butter, melted
- 1 c, sugar
- 1 TB. ground cinnamon
Preheat oven to 350. Mix cream cheese, 1/2 c. sugar, egg yolks and lemon juice until smooth. Cut crusts off each slice of bread and roll flat with rolling pin. Spread cream cheese mixture over bread slices and roll up. Cut each in half. Combine 1 cup sugar with cinnamon. Dip each in melted butter, then in sugar/cinnamon mixture and place on ungreased cookie sheet. Bake 15 minutes (or longer if they are close together). May be made ahead and refrigerated or frozen, and warmed just before eating. |
