Low-carb Cheesecake
By: Pa Fitness - 2 cups cottage cheese
- 2 eggs
- 1/2 cup sour cream
- 1/2 cup vanilla protein powder
- 1/4 cup Splenda
- 1 tsp. vanilla
- 2 T. sugar free jam
Preheat oven to 375. Beat together cottage cheese, eggs, sour cream, protein powder, vanilla, and Splenda until smooth. Pour this into a sprayed pie pan and then swirl the jam through it with a knife. Place on top oven rack with another pan filled with water on the bottom rack. Bake for 30-40 minutes. Allow to cool before cutting. Yield: 8 servings. |
