Chicken Pecan Fettucine
By: Jodi Hubert - 10 oz. fettucine
- 1/4 c. butter
- 2-3 uncooked chicken breasts
- 2 c. sliced fresh mushrooms
- 1 c. sliced green onions
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 clove garlic, finely chopped
- (Sauce):
- 1/4 c. half and half
- 1/2 c. butter
- 1/4 tsp. salt
- 1/4 tsp. garlic powder
- 1/4 tsp. pepper
- 1/2 c. fresh parmesan cheese, shredded
- 1 c. coarsely chopped pecans, toasted
Cook fettucine. Melt butter in large skillet. Cook chicken completely. Remove chicken; reserve drippings. Add mushrooms, green onions, salt, pepper and garlic to skillet. Cook until tender. Add chicken and simmer for 15 more minutes. Meanwhile, to make sauce, combine half and half, butter, salt, garlic powder, pepper, and parmesan cheese. Combine fettucine, chicken mixture and sauce. Top with pecans. Serve and enjoy! |
